Ingredients

For the Soup:
  • 2 lbs (0.9 kg) chicken (or pork ribs)
  • 8 cups (1.9 L) water
  • 2 limes, juiced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 Scotch bonnet pepper, whole
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon allspice
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • ½ cup (0.12 L) white vinegar

Instructions

  1. Prepare the Meat

    Rinse the chicken or pork with lime juice and water to remove any impurities. Cut the meat into bite-sized pieces.

  2. Cook the Base

    In a large pot, bring 8 cups of water to a boil. Add the meat, onion, garlic, bay leaves, and thyme. Simmer for 30 minutes, skimming off any foam.

  3. Add Vegetables and Seasonings

    Add the potatoes, carrots, Scotch bonnet pepper, salt, black pepper, allspice, and vinegar. Reduce the heat and let it simmer for another 20–30 minutes, or until the vegetables are tender.

  4. Adjust and Serve

    Taste and adjust seasoning if needed. Remove the Scotch bonnet pepper for a milder flavor. Serve hot with Johnny cakes or Bahamian bread.
