Bara (Surinamese Fried Dough)

Experience the bold flavors of Suriname with Bara, a beloved street food made from spiced chickpea flour dough, deep-fried to golden perfection. Crispy on the outside, soft on the inside, Bara is a perfect snack or appetizer that captures the vibrant taste of Surinamese cuisine.

Ingredients

  • 2 cups chickpea flour (besan)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 small onion, finely chopped
  • 1–2 cloves garlic, minced
  • 1 tablespoon chopped fresh cilantro
  • 1/2 cup water (adjust as needed)
  • Vegetable oil, for deep frying

Instructions

  1. Prepare the Dough

    In a large bowl, combine chickpea flour, baking powder, salt, turmeric, cumin, and cayenne. Add chopped onion, garlic, and cilantro. Mix well. Gradually add water, stirring until a thick, sticky batter forms. The consistency should hold together but still be soft enough to shape.

  2. Shape and Fry

    Heat vegetable oil in a deep pan over medium heat. Using wet hands or a spoon, shape small portions of the dough into flat discs or balls. Carefully place the Bara in hot oil, frying until golden brown on both sides, about 3–4 minutes per side.

  3. Serve

    Drain on paper towels and serve warm. Bara is often enjoyed with chutneys, spicy sauces, or as part of a snack platter.
