Bara (Surinamese Fried Dough)

- 2 cups chickpea flour (besan)
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin powder
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 small onion, finely chopped
- 1–2 cloves garlic, minced
- 1 tablespoon chopped fresh cilantro
- 1/2 cup water (adjust as needed)
- Vegetable oil, for deep frying

In a large bowl, combine chickpea flour, baking powder, salt, turmeric, cumin, and cayenne. Add chopped onion, garlic, and cilantro. Mix well. Gradually add water, stirring until a thick, sticky batter forms. The consistency should hold together but still be soft enough to shape.

Heat vegetable oil in a deep pan over medium heat. Using wet hands or a spoon, shape small portions of the dough into flat discs or balls. Carefully place the Bara in hot oil, frying until golden brown on both sides, about 3–4 minutes per side.
