Mafé (West African Peanut Stew)

Ingredients
- 1.5 pounds beef, chicken, or lamb, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1–2 teaspoons chili powder or to taste
- 1 teaspoon smoked paprika
- 1 can (14 oz) diced tomatoes
- 1/2 cup natural peanut butter
- 3 cups beef or chicken broth
- 2 large carrots, sliced
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or couscous, for serving

Prepare the Meat
Heat vegetable oil in a large pot over medium-high heat. Season the meat with salt and pepper, then brown on all sides. Remove the meat and set aside.

Sauté Aromatics
In the same pot, add onion, garlic, and ginger. Sauté until fragrant and softened, about 3–5 minutes. Stir in chili powder and smoked paprika.

Add Tomatoes and Peanut Butter
Stir in diced tomatoes and cook for 2–3 minutes. Reduce heat slightly and whisk in peanut butter until fully incorporated.

Return the meat to the pot and add broth. Bring to a gentle boil, then reduce heat and simmer for 30 minutes, partially covered, allowing flavors to meld.

Add carrots, sweet potatoes, and red bell pepper. Continue simmering for another 20–25 minutes, or until vegetables are tender and meat is cooked through. Adjust seasoning with salt and pepper.
