Kabsa (Saudi Spiced Rice with Meat)

Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 1 kg chicken pieces (or lamb)
- 3 tablespoons vegetable oil
- 2 large onions, finely chopped
- 4 cloves garlic, minced
- 2 large tomatoes, chopped
- 1/4 cup tomato paste
- 4 cups chicken or lamb broth
- 1/2 cup raisins (optional)
- 1/2 cup slivered almonds, toasted
- Salt to taste
- Black pepper to taste
- Spices:
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground black lime (loomi) or 1 teaspoon dried lime powder
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground saffron (optional, soaked in 2 tablespoons warm water)

Prepare the Meat
Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until golden brown. Add garlic and cook for another minute until fragrant. Season the chicken or lamb pieces with salt and pepper, then brown them on all sides in the pot.

Cook the Base
Add chopped tomatoes and tomato paste to the meat, stirring to combine. Mix in all the spices and cook for 2–3 minutes to release the aromas. Pour in the broth, cover the pot, and simmer on low heat for 30–40 minutes (chicken) or 1–1.5 hours (lamb) until the meat is tender.

Prepare the Rice
Drain the soaked rice and add it to the pot with the meat and cooking liquid. If using saffron, drizzle the saffron water over the rice. Cover and cook on low heat for 20–25 minutes until the rice is fluffy and fully cooked.

Gently mix in raisins and toasted almonds. Serve Kabsa hot, garnished with additional toasted almonds if desired.
