Tamales

Ingredients
- 4 cups masa harina (corn flour for tamales)
- 2 1/2 cups chicken or vegetable broth
- 1 cup lard or vegetable shortening, softened
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups cooked, shredded chicken (or pork, beef, or vegetables)
- 1 cup red or green salsa
- 30-40 dried corn husks, soaked in warm water for 30 minutes

Prepare the Filling
Mix the shredded chicken with salsa in a bowl until well coated. Set aside.

Make the Masa Dough
In a large bowl, combine masa harina, baking powder, and salt. Gradually add the broth, mixing until a soft dough forms. Beat in the lard or shortening until the dough is light and fluffy.

Assemble the Tamales
Drain the soaked corn husks and pat them dry. Spread about 2 tablespoons of masa dough onto the center of each husk, leaving a border at the edges. Add a spoonful of the filling on top of the dough. Fold the sides of the husk over the filling, then fold the bottom up.

Steam the Tamales
Arrange the tamales upright in a steamer basket, open side up. Cover with a damp cloth and steam over medium heat for 1 to 1.5 hours, or until the masa is firm and cooked through. Check occasionally and add water to the steamer as needed.
