Patacones (Fried Green Plantains)

Ingredients
- 2 large green plantains
- Vegetable oil for frying
- Salt to taste

Prepare the Plantains
Peel the green plantains by cutting off the ends and making shallow lengthwise slits in the skin. Remove the peel carefully. Slice the plantains into 1-inch thick pieces.

First Fry
Heat vegetable oil in a deep skillet over medium heat. Fry the plantain slices for about 3-4 minutes on each side until they are lightly golden but not fully crispy. Remove them from the oil and drain on paper towels.

Flatten the Plantains
Using a flat object like the bottom of a glass or a small plate, gently press each fried plantain slice until it is about half its original thickness. Be careful not to break them.

Second Fry
Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes per side, until they are golden brown and crispy. Remove from oil and drain on paper towels.

Sprinkle with salt while still hot. Serve immediately with your choice of toppings or dips.
