Cepelinai (Lithuanian Potato Dumplings)

Ingredients

  • 2 lbs (900 g) potatoes, peeled
  • 1/2 cup (60 g) all-purpose flour
  • 1 large egg
  • 1 tsp salt
  • 1/2 lb (225 g) ground pork or beef
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 4 slices bacon, chopped
  • 1 cup (240 ml) sour cream
  • Fresh dill, for garnish

Instructions

  1. Prepare the Filling

    In a skillet, cook the chopped onion until soft. Mix with ground meat and season with salt and pepper. Set aside.

  2. Make the Potato Dough

    Grate the peeled potatoes finely. Place in a clean cloth and squeeze out excess liquid. Combine grated potatoes with flour, egg, and salt to form a pliable dough.

  3. Form the Dumplings

    Take a portion of dough, flatten it in your hand, and place a spoonful of meat filling in the center. Fold the dough over the filling and shape it into an oval, Zeppelin-like form. Repeat with remaining dough and filling.

  4. Cook the Cepelinai

    Bring a large pot of salted water to a boil. Reduce to a gentle simmer and carefully add the dumplings. Cook for 25–30 minutes, until they float to the surface and are cooked through.

  5. Prepare the Sauce

    In a small pan, cook the chopped bacon until crispy. Remove from heat and stir in sour cream, combining the flavors.

  6. Serve

    Place the cooked dumplings on a plate, spoon the bacon-sour cream sauce over them, and garnish with fresh dill.
