Supoesi (Samoan Papaya Soup)

- 2 very ripe papayas (approximately 6–7 inches each)
- 1 cup small tapioca pearls
- 4 cups water
- 1 can (approximately 400 ml) coconut milk
- ½ cup brown sugar (adjust to taste)
- 4 lemon leaves (optional, for fragrance)

Prepare the Papayas
Wash the papayas thoroughly. Cut them in half, remove the seeds, and scoop out the flesh. Place the papaya flesh into a medium-sized pot. Add 4 cups of water to the pot. Cover and bring to a boil over medium-high heat. Once boiling, reduce the heat and simmer for 10–15 minutes, stirring occasionally to break down the papaya into a smooth consistency.

Soak the Tapioca Pearls
While the papaya mixture is simmering, place the tapioca pearls in a separate bowl and cover them with water. Let them soak for about 10 minutes to soften.

Cook the Tapioca Pearls
Drain the soaked tapioca pearls and add them to the simmering papaya mixture. Continue to cook for an additional 15 minutes, stirring regularly to prevent sticking. The mixture will begin to thicken as the tapioca pearls cook.

Add Coconut Milk and Sugar
Stir in the coconut milk and brown sugar. Continue to cook for another 5 minutes, allowing the flavors to meld together. Taste and adjust the sweetness by adding more sugar if desired.

Infuse with Lemon Leaves
Add the lemon leaves to the pot and let them steep in the mixture for about 5 minutes. Remove the lemon leaves before serving.
