Callaloo Soup

- 1 scallion, chopped

- 1 bunch callaloo (or substitute with spinach or Swiss chard), chopped
- 1 medium okra, sliced (optional)
- 1 medium potato, peeled and diced
- 1 cup pumpkin or squash, peeled and diced
- 2 cups vegetable or chicken broth
- 1 cup coconut milk
- 1 teaspoon thyme (fresh or dried)
- Salt and black pepper to taste

Prepare the Base
Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and scallion. Sauté for 2–3 minutes until fragrant and softened.

Add the Vegetables
Stir in the callaloo, okra, potato, and pumpkin. Add the thyme and Scotch bonnet pepper. Cook for a few minutes, stirring occasionally to coat the vegetables with the aromatics.

Simmer the Soup
Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20–25 minutes, or until the vegetables are tender.

Remove the Scotch bonnet pepper (for a milder flavor). Using an immersion blender, blend the soup until smooth, or transfer it to a blender in batches.

Return the soup to the pot and stir in the coconut milk. Simmer gently for another 5 minutes. Season with salt and black pepper to taste.
