Falafel (Middle Eastern Chickpea Fritters)

Ingredients

  • 1 1/2 cups dried chickpeas (soaked overnight)
  • 1 small onion, roughly chopped
  • 3 cloves garlic
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon baking powder
  • 3–4 tablespoons all-purpose flour
  • Vegetable oil, for frying

Instructions

  1. Prepare the Chickpea Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne, salt, and black pepper. Process until the mixture is coarse but holds together when pressed.

  2. Form the Falafel

    Transfer the mixture to a bowl and stir in baking powder and flour. Let it rest for 30 minutes. Shape the mixture into small balls or patties, about 1.5 inches in diameter.

  3. Fry the Falafel

    Heat vegetable oil in a deep skillet or saucepan to 350°F (175°C). Fry the falafel in batches until golden brown and crispy, about 3–4 minutes per side. Remove with a slotted spoon and drain on paper towels.

  4. Serve

    Serve the falafel warm, in pita bread with hummus, tahini sauce, fresh vegetables, or alongside a salad.
