Subanik (Guatemalan Spiced Meat Stew)

Experience the vibrant flavors of Guatemalan cuisine with Subanik, a traditional stew that combines tender meats with a rich, smoky, and slightly spicy sauce. Ingredients

  • 1 lb beef, cut into cubes
  • 1 lb pork, cut into cubes
  • 1/2 lb chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium tomatoes, chopped
  • 3 guajillo chilies, seeds removed and soaked in hot water
  • 2 pasilla chilies, seeds removed and soaked in hot water
  • 1 teaspoon achiote paste (or annatto)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare the Sauce

    Blend soaked guajillo and pasilla chilies with tomatoes, onion, garlic, bell peppers, achiote paste, oregano, cumin, and a little broth until smooth.

  2. Brown the Meats

    Heat vegetable oil in a large pot over medium-high heat. Brown beef, pork, and chicken in batches, then remove and set aside.

  3. Simmer the Stew

    Pour the blended sauce into the pot and cook for 5–7 minutes, stirring constantly. Return the browned meats to the pot, add the remaining broth, season with salt and pepper, and bring to a gentle simmer. Cover and cook over low heat for 1.5 to 2 hours, stirring occasionally, until the meats are tender and infused with the rich, smoky sauce.

  4. Serve

    Serve Subanik hot, garnished with fresh cilantro.
