Ingredients

  • 4 dried ancho chilies
  • 4 dried guajillo chilies
  • 2 dried pasilla chilies
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1/4 cup almonds, toasted
  • 1/4 cup raisins
  • 2 tablespoons sesame seeds, plus extra for garnish
  • 1 slice of stale bread, toasted
  • 2 cups chicken or vegetable broth
  • 2 ounces dark chocolate, chopped
  • Salt to taste

Instructions

  1. Prepare the Chilies

    Remove stems and seeds from the dried chilies. Toast them lightly in a dry skillet over medium heat for a few minutes until fragrant. Soak the toasted chilies in hot water for 20 minutes to soften.

  2. Cook the Base

    Heat vegetable oil in a large skillet over medium heat. Sauté the chopped onion and garlic until soft and translucent. Stir in cinnamon, cumin, and cloves, cooking until aromatic.

  3. Blend the Sauce

    In a blender, combine the soaked chilies, sautéed onion and garlic, almonds, raisins, sesame seeds, and toasted bread. Add 1 cup of broth and blend until smooth.

  4. Simmer

    Pour the blended mixture into a saucepan over medium heat. Add the remaining broth and chopped chocolate. Simmer gently for 20–30 minutes, stirring frequently, until the sauce thickens. Season with salt to taste.

  5. Serve

    Pour Mole Sauce over cooked chicken, turkey, or roasted vegetables. Sprinkle with additional sesame seeds for garnish.
