Gibanica (Serbian Cheese Pie)

Ingredients

  • 1 pound phyllo dough, thawed if frozen
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup plain yogurt
  • 1/2 cup vegetable oil
  • 16 ounces feta cheese, crumbled
  • 8 ounces ricotta cheese (optional, for extra creaminess)
  • Salt to taste
  • 1/2 teaspoon baking soda (optional, for fluffiness)

Instructions

  1. Prepare the Filling

    In a large bowl, whisk together the eggs, sour cream, yogurt, and vegetable oil until smooth. Add the crumbled feta and ricotta cheeses, mixing gently to combine. Season with a pinch of salt (remember that feta is already salty) and stir in the baking soda if using.

  2. Assemble the Gibanica

    Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with oil or butter. Layer half of the phyllo sheets in the dish, lightly brushing each sheet with oil. Allow the edges to hang over the sides. Spread the cheese mixture evenly over the phyllo base. Layer the remaining phyllo sheets on top, again brushing each with oil. Fold the overhanging edges over the top to seal the filling.

  3. Bake

    Place the Gibanica in the preheated oven and bake for 45–55 minutes, or until the top is golden brown and crispy. Let it cool slightly before slicing, allowing the layers to set.

  4. Serve

    Serve Gibanica warm or at room temperature. It pairs wonderfully with a fresh salad, yogurt, or a cup of strong coffee for a traditional Serbian experience.
