Stroopwafel (Dutch Caramel Waffles)

Ingredients

For the Waffles:
  • 1 cup (225 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1/4 cup (60 ml) warm milk
  • 1 large egg
  • 3 cups (360 g) all-purpose flour
For the Caramel Filling:
  • 1 cup (200 g) brown sugar
  • 1/2 cup (115 g) unsalted butter
  • 1/4 cup (60 ml) golden syrup or corn syrup
  • 1 teaspoon ground cinnamon

Instructions

  1. Activate the Yeast

    In a small bowl, combine warm milk and yeast. Let it sit for 5–10 minutes until frothy.

  2. Make the Dough

    In a large mixing bowl, cream together butter, sugar, and salt. Add the egg and yeast mixture, mixing until smooth. Gradually add flour and knead until a soft, elastic dough forms. Cover and let rise in a warm place for 45–60 minutes, until doubled in size.

  3. Prepare the Caramel Filling

    In a small saucepan over medium heat, combine brown sugar, butter, syrup, and cinnamon. Stir constantly until the sugar dissolves and the mixture becomes smooth and slightly thickened. Remove from heat and let cool slightly.

  4. Shape the Waffles

    Preheat a waffle iron (preferably a thin waffle or pizzelle iron). Divide the dough into small balls, about the size of a golf ball. Place a dough ball in the waffle iron and cook until golden brown, about 1–2 minutes. Repeat with remaining dough.

  5. Assemble the Stroopwafels

    While the waffles are still warm, carefully slice each waffle horizontally into two thin layers using a sharp knife. Spread a thin layer of caramel filling on one half and sandwich with the other half. Press gently to seal.

  6. Serve

    Allow the stroopwafels to cool slightly before serving. Enjoy with a cup of coffee or tea for the authentic Dutch experience.
