Bitterballen (Dutch Beef Croquettes)

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth

  • 1 cup cooked shredded beef (from roast beef or stew)
  • 2 tablespoons chopped parsley
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. Prepare the Ragout

    Melt butter in a medium saucepan over medium heat. Stir in flour to make a roux, cooking for 1-2 minutes until slightly golden. Gradually whisk in beef broth until smooth. Cook until the mixture thickens into a creamy consistency. Season with nutmeg, salt, and pepper. Stir in shredded beef and parsley. Remove from heat and let cool completely.

  2. Shape the Bitterballen

    Once the filling is cool, shape it into small balls, about 1 to 1.5 inches in diameter.

  3. Coat the Balls

    Roll each ball in the beaten egg, then coat evenly with breadcrumbs. For extra crispiness, repeat with a second layer of egg and breadcrumbs.

  4. Fry the Bitterballen

    Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the Bitterballen in batches until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

  5. Serve

    Serve hot with traditional Dutch mustard for dipping.
