Sinigang (Filipino Sour Soup)

Savor the tangy and comforting flavors of the Philippines with Sinigang, a classic sour soup that balances savory meat, fresh vegetables, and a signature sourness from tamarind. Ingredients

  • 1 lb pork ribs or pork belly, cut into chunks
  • 8 cups water
  • 1 medium onion, quartered
  • 2 medium tomatoes, quartered
  • 1 radish, sliced
  • 1 cup long beans (sitaw), cut into 3-inch pieces
  • 1 eggplant, sliced
  • 1 bunch water spinach (kangkong)
  • 2–3 tablespoons fish sauce (patis)
  • 1–2 tablespoons tamarind paste or 1 packet sinigang mix
  • Salt and pepper to taste

Instructions

  1. Prepare the Broth

    In a large pot, combine pork, water, onion, and tomatoes. Bring to a boil over medium-high heat. Skim off any scum that rises to the surface to keep the broth clear. Reduce heat and simmer for 45–60 minutes, or until pork is tender.

  2. Add Sourness and Seasoning

    Stir in tamarind paste or sinigang mix. Add fish sauce, and season with salt and pepper to taste. Adjust the sourness to your preference.

  3. Cook the Vegetables

    Add radish and simmer for 5–7 minutes until slightly tender. Add long beans and eggplant, simmering for another 3–5 minutes. Finally, add water spinach and cook just until wilted.

  4. Serve

    Ladle Sinigang into bowls, making sure each serving has a mix of pork and vegetables. Serve hot with steamed rice on the side.
