Kwati (Nepalese Mixed Bean Soup)

Ingredients
- 1/4 cup black gram (urad dal)
- 1/4 cup mung beans
- 1/4 cup kidney beans
- 1/4 cup chickpeas
- 1/4 cup soybeans
- 1/4 cup field peas
- 1/4 cup black-eyed peas
- 1/4 cup lentils (red or brown)
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 tablespoons ghee or vegetable oil
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon chili powder (optional)
- 1/2 teaspoon fenugreek seeds
- Salt to taste
- 4–5 cups water or vegetable broth
- Fresh cilantro, chopped, for garnish

Prepare the Beans
Combine all beans and soak them overnight in water. The next day, drain the water and allow the beans to sprout for about 1–2 days by keeping them in a damp cloth or covered container.

Cook the Beans
Once sprouted, rinse the beans and place them in a large pot or pressure cooker with 4–5 cups of water or broth. Cook until the beans are tender (about 20–25 minutes in a pressure cooker, or 45–60 minutes if boiling).

Prepare the Spice Base
In a large pan, heat ghee or oil over medium heat. Add fenugreek seeds and cumin seeds. When they begin to splutter, add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for another minute.

Add Tomatoes and Spices
Add chopped tomatoes, turmeric, coriander, cumin, and chili powder. Cook until the tomatoes soften and the oil separates from the mixture.

Combine and Simmer
Pour the cooked beans and their broth into the spice mixture. Stir well and simmer for 15–20 minutes to allow the flavors to blend. Adjust salt and consistency as desired.

Garnish with fresh cilantro and serve hot. Kwati pairs wonderfully with steamed rice or can be enjoyed on its own as a wholesome soup.
