Ingredients
- 1 lb chicken, cut into serving pieces
- 1 lb pork belly, cut into cubes
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 cup water
- 1 large onion, sliced
- 6 cloves garlic, minced
- 3 bay leaves
- 1 teaspoon whole black peppercorns
- 2 tablespoons cooking oil
- Salt and pepper to taste
- Optional: 2 tablespoons brown sugar
Instructions
-
Marinate the Meat
In a large bowl, combine the chicken and pork with soy sauce, half of the minced garlic, and a pinch of black pepper. Let it marinate for at least 30 minutes, or overnight for deeper flavor.
-
Brown the Meat
Heat cooking oil in a large pan over medium heat. Sear the marinated meat until lightly browned on all sides. Remove and set aside.
-
Cook the Adobo
In the same pan, sauté the onion and remaining garlic until fragrant. Return the meat to the pan and add vinegar, water, bay leaves, and whole peppercorns. Bring to a boil without stirring, then reduce heat to low and simmer for 30–40 minutes, or until the meat is tender.
-
Adjust Seasoning
Taste the sauce and add salt, pepper, or brown sugar as desired to balance the tanginess and saltiness. Simmer for an additional 5–10 minutes to let the flavors meld.
-
Serve
Serve Adobo hot with steamed rice. For added depth, spoon some sauce over the meat and rice.
Serving
Adobo pairs beautifully with simple sides like sautéed vegetables or a fresh cucumber salad. This classic Filipino dish offers a perfect balance of savory, tangy, and slightly sweet flavors that comfort the soul with every bite.
