- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons tahini (optional)
- 2 tablespoons plain yogurt or lemon juice
- 2 tablespoons pomegranate molasses (optional for tanginess)
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1/2 teaspoon black pepper
- Salt to taste
- Chopped parsley (optional)

Prepare the Dough
In a large bowl, combine flour, salt, sugar, and yeast. Add olive oil and gradually pour in warm water, mixing until a soft dough forms. Knead the dough for about 8–10 minutes until smooth and elastic. Cover and let it rest in a warm place for 1 hour or until doubled in size.

Make the Filling
In a skillet, cook the ground meat over medium heat until browned. Add onions, garlic, and tomatoes, and cook until softened. Stir in tahini, yogurt or lemon juice, pomegranate molasses (if using), and seasonings. Simmer for a few minutes until the mixture thickens slightly. Allow the filling to cool.

Assemble the Sfihas
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Divide the dough into small balls (about the size of a golf ball). Roll each one into a small circle, about 4 inches in diameter. Place a spoonful of the meat mixture in the center and spread it evenly, leaving a small border of dough around the edges.

Arrange the sfihas on the baking sheet and bake for 12–15 minutes, or until the dough is golden and the filling is cooked through.
