Halawet el Jibn (Sweet Cheese Rolls)

Ingredients
For the dough:
- 1 cup mozzarella cheese (or Akkawi cheese, soaked to remove salt)
- 1/2 cup fine semolina
- 1/2 cup water
- 1 tablespoon sugar
- 1 teaspoon rose water (optional)

- 1 cup ricotta cheese or Ashta (thickened cream)
- 2 tablespoons powdered sugar
- 1 teaspoon orange blossom water or rose water
For the syrup:
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon lemon juice
- 1 teaspoon rose water or orange blossom water
For garnish:
- Crushed pistachios
- Rose petals (optional)

Prepare the Syrup
In a small saucepan, combine sugar and water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Add lemon juice and simmer for 5–7 minutes until slightly thickened. Remove from heat and stir in rose or orange blossom water. Allow to cool completely.

Make the Dough
In a separate saucepan, combine water and sugar. Bring to a light simmer, then add semolina and stir continuously until it thickens slightly. Add the cheese and keep stirring over low heat until the mixture forms a smooth, stretchy dough that pulls away from the sides of the pan. Add rose water if desired.

Shape the Rolls
Transfer the hot dough onto a lightly greased surface or parchment paper. While still warm, roll it out into a thin rectangle (about 1/4 inch thick). Spread the ricotta or Ashta filling evenly over the surface. Gently roll the dough into a tight log and cut into small, bite-sized pieces (about 2 inches long).

Arrange the rolls on a serving plate. Drizzle with cooled syrup and garnish with crushed pistachios and rose petals. Serve chilled or at room temperature.
