Fattoush (Lebanese Bread Salad)

Ingredients

  • 2 pieces pita bread
  • 3 tablespoons olive oil
  • 2 cups romaine lettuce, chopped
  • 1 large cucumber, diced
  • 2 tomatoes, diced
  • 1 green bell pepper, diced
  • 4 radishes, thinly sliced
  • 3 green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon sumac
  • Juice of 1 lemon
  • 2 tablespoons olive oil (for dressing)
  • 1 teaspoon pomegranate molasses (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Pita Chips

    Preheat the oven to 375°F (190°C). Cut the pita bread into small squares or triangles. Brush lightly with olive oil and bake for 8–10 minutes, or until golden and crisp. Set aside to cool.

  2. Make the Dressing

    In a small bowl, whisk together lemon juice, olive oil, pomegranate molasses (if using), sumac, salt, and pepper until well combined.

  3. Assemble the Salad

    In a large salad bowl, combine lettuce, cucumber, tomatoes, bell pepper, radishes, green onions, parsley, and mint. Toss gently to mix the vegetables.

  4. Add the Pita and Dressing

    Add the toasted pita chips to the salad. Pour the dressing over the top and toss until everything is evenly coated.

  5. Serve

    Serve Fattoush immediately for a crisp, fresh texture, or let it sit for a few minutes to allow the flavors to blend.
