Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, finely chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups okra, sliced
- 1 pound chicken thighs, cut into pieces
- 1/2 pound smoked sausage, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 teaspoons Cajun or Creole seasoning
- 1 bay leaf
- Salt and pepper to taste
- Cooked white rice, for serving

Make the Roux
In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour and cook, stirring constantly, until the mixture turns a deep golden brown, about 10–15 minutes.

Sauté the Vegetables
Add the chopped onion, bell pepper, celery, and garlic to the roux. Cook until the vegetables are soft and fragrant, about 5–7 minutes.

Add Meats and Okra
Stir in the chicken and sausage, cooking for 5 minutes to brown the meats lightly. Add the sliced okra and cook for another 5 minutes.

Simmer the Stew
Add the diced tomatoes, chicken broth, Cajun seasoning, and bay leaf. Bring the mixture to a boil, then reduce heat and simmer, uncovered, for 45–60 minutes, stirring occasionally, until the chicken is cooked through and the stew has thickened.
