Rich, nutty, and slightly spicy, this versatile sauce is a staple in many households and adds warmth and depth to any meal.

Ingredients

  • 1 cup natural peanut butter (smooth or chunky)
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1-2 fresh chili peppers, chopped (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tablespoon tomato paste
  • Salt to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • Juice of 1 lime
  • Fresh parsley or cilantro, chopped, for garnish

Instructions

  1. Prepare the Base

Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the garlic, ginger, and chili peppers, cooking for another 1–2 minutes until fragrant.

  2. Add the Tomatoes and Broth

Stir in the diced tomatoes and tomato paste. Pour in the chicken or vegetable broth, bringing the mixture to a gentle simmer. Cook for 10 minutes, allowing the flavors to meld.

  3. Incorporate the Peanut Butter

Reduce the heat to low and gradually whisk in the peanut butter until fully combined. Continue simmering the sauce for 10–15 minutes, stirring occasionally to prevent sticking. The sauce should thicken slightly.

  4. Season and Finish

Add salt, black pepper, and smoked paprika (if using). Stir in lime juice for a touch of acidity and brightness. Taste and adjust seasoning as needed.

  5. Serve

Serve Sauce d’Arachide warm over grilled or roasted chicken, beef, tofu, or steamed vegetables. It also pairs beautifully with plain rice, couscous, or plantains.

Serving

Garnish with freshly chopped parsley or cilantro for a pop of color and freshness. Enjoy the rich, nutty, and slightly spicy flavors of Sauce d’Arachide, a comforting dish that brings the heart of West African cooking to your table.
