Sernik (Polish Cheesecake)

Ingredients

For the Crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
For the Filling:
  • 2 pounds (900 g) farmer’s cheese or cream cheese, well drained
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 tablespoons all-purpose flour
  • Zest of 1 lemon (optional)
For Topping (optional):
  • Powdered sugar for dusting
  • Fresh berries

Instructions

  1. Prepare the Crust

    Preheat oven to 350°F (175°C). In a bowl, combine flour, sugar, and salt. Cut in the cold butter until mixture resembles coarse crumbs. Add the egg and vanilla, mixing until the dough comes together. Press the dough evenly into the bottom of a greased 9-inch (23 cm) springform pan. Bake for 10-12 minutes until lightly golden. Remove and let cool slightly.

  2. Make the Filling

    In a large bowl, beat the farmer’s cheese or cream cheese until smooth. Gradually add sugar and continue to beat until creamy. Mix in eggs, one at a time, then add vanilla, sour cream, flour, and lemon zest if using. Beat until fully combined.

  3. Assemble and Bake

    Pour the cheese filling over the pre-baked crust, smoothing the top with a spatula. Bake at 350°F (175°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for about 30 minutes to prevent cracking. Remove from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

  4. Serve

    Carefully remove the springform pan. Dust with powdered sugar and top with fresh berries if desired. Slice and serve chilled for a creamy, luscious dessert experience.
