Ingredients

  • 2 lbs (900 g) beef, cubed
  • 2 tbsp (30 ml) vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp (5 g) ground coriander
  • 1 tsp (5 g) ground cumin
  • 1/2 tsp (2.5 g) paprika
  • 3 medium tomatoes, diced
  • 2 medium carrots, sliced
  • 1 large potato, cubed
  • 1/2 cup (120 ml) beef stock or water
  • Salt and black pepper to taste
  • Optional: fresh cilantro for garnish

Instructions

  1. Prepare the Beef

    Wash and cube the beef into bite-sized pieces.

  2. Sear the Meat

    Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and sear until browned on all sides. Remove and set aside.

  3. Sauté the Aromatics

    In the same pot, add the onion and garlic. Sauté until golden and fragrant.

  4. Add Spices and Vegetables

    Stir in coriander, cumin, and paprika. Add the tomatoes and cook until they break down into a sauce.

  5. Combine Ingredients

    Return the beef to the pot, along with carrots, potatoes, and beef stock. Stir well and season with salt and black pepper.

  6. Simmer the Stew

    Cover and simmer over low heat for 45–60 minutes, stirring occasionally, until the beef is tender and the vegetables are cooked through.

  7. Garnish and Serve

    Remove from heat, garnish with fresh cilantro, and serve hot.
