Gateau Patate (Reunionese Sweet Potato Cake)

- 1 kg sweet potatoes, peeled and cut into chunks
- 200 ml coconut milk
- 150 g sugar (adjust to taste)

- 1/4 teaspoon ground nutmeg
- Pinch of salt

Cook the Sweet Potatoes
Boil the sweet potato chunks in a pot of water until tender, about 15–20 minutes. Drain well and mash until smooth. Allow to cool slightly.

Prepare the Cake Mixture
In a large bowl, combine the mashed sweet potatoes, coconut milk, sugar, butter, eggs, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix until the batter is smooth and creamy.

Preheat the oven to 180°C (350°F). Grease a baking dish or line it with parchment paper. Pour the sweet potato mixture into the prepared dish and smooth the top. Bake for 45–50 minutes, or until the cake is set and lightly golden on top.
