Flija (Albanian Layered Pancake)

Ingredients

  • 2 cups all-purpose flour
  • 2 cups water
  • 1 teaspoon salt
  • 1 cup plain yogurt
  • 1/2 cup melted butter or ghee
  • Optional: eggs (1–2 for richer batter)

Instructions

  1. Prepare the Batter

    In a large mixing bowl, combine flour and salt. Gradually whisk in water until smooth. Stir in yogurt and eggs (if using) to create a slightly thick but pourable batter. Set aside.

  2. Layer the Flija

    Preheat a large, flat pan or traditional saj (metal griddle) over medium heat. Brush the pan lightly with melted butter or ghee. Pour a thin layer of batter into the pan, swirling to cover evenly. Cook for 2–3 minutes until the surface sets and the edges lift slightly.

  3. Add More Layers

    Brush the cooked layer with butter, then pour another thin layer of batter on top. Repeat the process, layering and brushing with butter, until all the batter is used (usually 8–10 layers).

  4. Cook Thoroughly

    Cover the pan with a lid or foil and cook over low heat for 20–30 minutes, allowing the layers to steam and cook fully. A traditional method involves finishing under a fire or hot coals for a smoky flavor.

  5. Serve

    Let the Flija cool slightly, then cut into wedges or squares. Serve warm with yogurt, honey, or cheese.
