Sarma (Stuffed Cabbage Rolls)

Ingredients

  • 1 large head of cabbage

  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 2 cups water or broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon dried thyme or dill (optional)

Instructions

  1. Prepare the Cabbage

    Carefully remove the cabbage leaves from the head. Blanch them in boiling water for 2-3 minutes until soft and pliable. Drain and set aside.

  2. Make the Filling

    In a large bowl, combine ground meat, rice, chopped onion, garlic, paprika, salt, and pepper. Mix thoroughly until well combined.

  3. Assemble the Rolls

    Place a spoonful of the meat mixture in the center of each cabbage leaf. Fold in the sides and roll tightly, securing the filling inside.

  4. Cook the Sarma

    Heat vegetable oil in a large pot over medium heat. Layer the bottom with leftover cabbage leaves to prevent sticking. Arrange the rolls seam-side down in the pot.

  5. Add the Sauce

    Mix tomato paste, crushed tomatoes, and water or broth. Pour over the cabbage rolls, ensuring they are mostly covered. Sprinkle with thyme or dill if using.

  6. Simmer

    Cover the pot and simmer over low heat for 1.5 to 2 hours, stirring occasionally and checking liquid levels. Add more water or broth if necessary.

  7. Serve

    Serve Sarma hot, spooning some of the tomato sauce over the rolls. Pair with crusty bread, mashed potatoes, or pickled vegetables for a traditional touch.
