Zurbian (Hyderabadi Mutton Biryani)

Experience the rich flavors of Hyderabadi cuisine with Zurbian, a fragrant and flavorful mutton biryani that combines tender meat with aromatic spices and basmati rice. Perfect for festive occasions or a special family meal, Zurbian is a dish that leaves a lasting impression with every bite.

Ingredients

  • 1 kg mutton, bone-in pieces
  • 2 cups basmati rice
  • 3 large onions, thinly sliced
  • 3 tablespoons ghee or vegetable oil
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 4-5 green chilies, slit
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 4-5 cloves
  • 2-3 green cardamoms
  • 1 black cardamom
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • Juice of 1 lemon
  • Salt to taste
  • 4 cups water

Instructions

  1. Marinate the Mutton

    In a large bowl, combine mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, garam masala, salt, and half of the chopped green chilies. Mix well and marinate for at least 2 hours, preferably overnight in the refrigerator.

  2. Prepare the Rice

    Rinse basmati rice thoroughly and soak for 30 minutes. Boil 4 cups of water with a pinch of salt, cloves, cardamoms, cinnamon, bay leaf, and black peppercorns. Add the soaked rice and cook until 70% done. Drain and set aside.

  3. Cook the Mutton

    Heat ghee or oil in a large, heavy-bottomed pot. Fry sliced onions until golden brown and set aside half for garnishing. Add marinated mutton to the pot and cook on medium heat until the mutton is tender and the oil separates from the masala, about 40–50 minutes.

  4. Layer the Biryani

    In the same pot, layer half of the partially cooked rice over the mutton. Sprinkle half of the chopped coriander and mint leaves, remaining green chilies, and fried onions. Layer the remaining rice on top and repeat the herbs and onions. Drizzle lemon juice over the top.

  5. Dum Cooking

    Cover the pot with a tight-fitting lid or seal with dough. Cook on low heat for 25–30 minutes to allow the flavors to meld together.

  6. Serve

    Gently fluff the rice before serving. Serve Zurbian hot with raita, salad, or a side of pickles.
