Ropa Vieja (Cuban Shredded Beef)

Ingredients

  • 2 pounds flank steak
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup beef broth
  • 1/4 cup dry white wine (optional)
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the Beef

    Season the flank steak with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear the steak on both sides until browned, about 3-4 minutes per side. Remove the steak and set aside.

  2. Cook the Vegetables

    In the same skillet, add onions, green and red bell peppers. Sauté until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.

  3. Simmer the Beef

    Return the steak to the skillet. Add crushed tomatoes, beef broth, white wine (if using), cumin, smoked paprika, oregano, and bay leaves. Stir to combine. Cover and simmer on low heat for 2 to 3 hours, or until the beef is tender and easily shredded.

  4. Shred the Beef

    Remove the steak from the skillet and shred it using two forks. Return the shredded beef to the sauce and stir well to combine. Cook for an additional 10-15 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper to taste.

  5. Serve

    Serve Ropa Vieja hot over white rice, alongside black beans and fried plantains for an authentic Cuban meal. Garnish with fresh cilantro for a burst of color and freshness.
