Tavče Gravče (Macedonian Baked Beans)

Ingredients

  • 2 cups dried white beans (or 3 cups cooked beans)
  • 1 large onion, finely chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon dried mint (optional, for authentic flavor)
  • 1 cup tomato sauce or crushed tomatoes
  • 1-2 cups water or vegetable broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beans

    If using dried beans, soak them overnight in cold water. Drain and rinse before cooking. Place the beans in a large pot, cover with fresh water, and simmer for about 1 hour or until tender but not mushy. Drain and set aside.

  2. Sauté the Vegetables

    Heat vegetable oil in a skillet over medium heat. Add chopped onion and red bell pepper, sautéing until soft and translucent, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.

  3. Add Spices and Tomato

    Stir in paprika, black pepper, and salt. Add tomato sauce or crushed tomatoes, mixing well to combine. Cook for 3-5 minutes to let the flavors meld.

    Preheat the oven to 375°F (190°C). In a baking dish, combine the cooked beans with the sautéed vegetable mixture. Add water or vegetable broth as needed to keep the beans moist. Cover with foil and bake for 30-40 minutes, stirring occasionally, until the beans are fully flavored and slightly thickened.
