Massaman Curry (Thai Coconut Beef Curry)

Experience the warm, aromatic flavors of Thai cuisine with Massaman Curry, a rich and mildly spiced dish that combines tender beef with creamy coconut milk, potatoes, and peanuts. This comforting curry is perfect for family dinners or special occasions and brings a harmonious balance of sweet, savory, and slightly tangy notes to your table.

Ingredients

  • 1 lb (450 g) beef, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 1 can (14 oz) coconut milk
  • 2–3 tablespoons Massaman curry paste
  • 2 medium potatoes, peeled and cut into chunks
  • 1 large onion, sliced
  • 1/4 cup roasted peanuts
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind paste
  • 1 tablespoon brown sugar
  • 1 cinnamon stick
  • 2–3 kaffir lime leaves (optional)
  • Salt to taste
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Instructions

  1. Prepare the Curry Base

    Heat vegetable oil in a large pot over medium heat. Add Massaman curry paste and sauté for 1–2 minutes until fragrant.

  2. Cook the Beef

    Add beef cubes to the pot and cook until browned on all sides. Pour in half of the coconut milk, stirring to combine, and simmer for 10 minutes to allow the flavors to meld.

  3. Add Vegetables and Seasonings

    Add potatoes, onion, peanuts, cinnamon stick, and kaffir lime leaves. Pour in the remaining coconut milk. Stir in fish sauce, tamarind paste, and brown sugar. Simmer gently for 30–40 minutes, or until the beef and potatoes are tender.

  4. Serve

    Taste the curry and adjust seasoning with salt or additional sugar or fish sauce as needed. Remove cinnamon stick and lime leaves before serving. Serve hot over jasmine rice and garnish with fresh cilantro.
