Pirozhki (Russian Stuffed Pastries)

Ingredients
For the Dough:
- 3 1/2 cups all-purpose flour
- 1 cup warm milk
- 2 1/4 teaspoons (1 packet) active dry yeast
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 large egg
- 3 tablespoons unsalted butter, melted
For the Filling (Savory example – meat and onion):
- 1/2 lb ground beef or pork
- 1 medium onion, finely chopped
- Salt and pepper to taste
- 1 tablespoon vegetable oil

- 1 egg, beaten

Prepare the Dough
In a small bowl, combine warm milk, yeast, and sugar. Let it sit for 5–10 minutes until foamy.
In a large mixing bowl, combine flour and salt. Add the yeast mixture, egg, and melted butter. Mix until a dough forms.
Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

Prepare the Filling
Heat vegetable oil in a skillet over medium heat. Add chopped onion and cook until translucent. Add ground meat, season with salt and pepper, and cook until browned. Remove from heat and let cool.

Assemble the Pirozhki
Punch down the risen dough and divide into small balls (about the size of a golf ball). Roll each ball into a small circle and place a spoonful of filling in the center. Fold the dough over the filling and pinch the edges to seal tightly. Place on a baking sheet lined with parchment paper. Optionally, brush the tops with beaten egg for a golden finish.

Bake
Preheat oven to 375°F (190°C). Bake pirozhki for 20–25 minutes, or until golden brown.
