Timpana (Maltese Baked Pasta Pie)

Ingredients

  • 1 lb (450 g) macaroni pasta
  • 1 sheet shortcrust or puff pastry (enough to line and cover a baking dish)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450 g) ground beef (or a mix of beef and pork)
  • 1 can (14 oz/400 g) chopped tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten (for binding the pasta mixture)
  • 1 egg yolk (for brushing pastry)

Instructions

  1. Prepare the Pasta

    Cook the macaroni in salted boiling water until just al dente. Drain and set aside.

  2. Make the Meat Sauce

    Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant. Stir in the ground meat and cook until browned. Add tomato paste, chopped tomatoes, wine, oregano, basil, salt, and pepper. Simmer gently for 20–30 minutes until the sauce thickens.

  3. Combine Pasta and Sauce

    In a large bowl, mix the cooked pasta with the meat sauce. Stir in Parmesan cheese and the beaten eggs, ensuring the pasta is well coated.

  4. Assemble the Pie

    Preheat oven to 375°F (190°C). Line a greased baking dish with pastry, leaving enough overhang to fold over the top. Pour in the pasta mixture, pressing gently to compact. Cover with the remaining pastry, sealing the edges well. Brush the top with beaten egg yolk for a golden finish.

  5. Bake

    Place in the preheated oven and bake for 45–55 minutes, or until the pastry is golden brown and crisp. Allow to rest for 10–15 minutes before slicing.
