Moroccan Chicken Tagine

Ingredients
- 2 lbs (900 g) chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- 1/2 cup green olives, pitted
- 1/2 cup dried apricots, halved
- 1 preserved lemon, quartered
- Fresh cilantro and parsley, chopped, for garnish

Prepare the Chicken
Season the chicken thighs with salt, pepper, and half of the spices (ginger, cinnamon, turmeric, cumin, paprika).

Brown the Chicken
Heat olive oil in a tagine or heavy-bottomed pot over medium-high heat. Brown the chicken on all sides until golden, then remove and set aside.

Sauté the Aromatics
In the same pot, sauté onions until soft, then add garlic and remaining spices, cooking for 1-2 minutes until fragrant.

Simmer the Tagine
Return the chicken to the pot. Add chicken broth, olives, dried apricots, and preserved lemon. Cover and simmer on low heat for 45–60 minutes, until the chicken is tender and infused with the spices.

Transfer the chicken and sauce to a serving platter. Garnish with fresh cilantro and parsley for a bright, fresh finish.
