Ingredients

  • 300 g smoked sausage, sliced
  • 200 g ham or cooked beef, diced
  • 1 large onion, finely chopped
  • 2 tablespoons vegetable oil
  • 3 pickled cucumbers, diced
  • 2 tablespoons tomato paste
  • 1.5 liters beef or chicken broth
  • 2–3 bay leaves
  • 5–6 black peppercorns
  • 1 tablespoon lemon juice
  • 2 tablespoons capers (optional)
  • Salt to taste
  • Fresh dill, chopped, for garnish
  • Sour cream, for serving

Instructions

  1. Prepare the Base

Heat vegetable oil in a large pot over medium heat. Sauté the chopped onion until golden and fragrant. Add the sliced smoked sausage and diced ham or beef, cooking for another 5 minutes to release the flavors.

  2. Add Vegetables and Broth

Stir in the diced pickles and tomato paste, combining well. Pour in the broth and add bay leaves and peppercorns. Bring the soup to a gentle boil, then reduce the heat and simmer for 20–30 minutes.

  3. Season and Finish

Add lemon juice and capers if using. Taste and adjust seasoning with salt. Remove bay leaves before serving.

  4. Serve

Ladle Solyanka into bowls and top with a dollop of sour cream. Garnish with freshly chopped dill for a burst of color and freshness.

Serving

Serve Solyanka hot with rye bread or garlic croutons on the side. This tangy, savory soup is perfect as a starter or a hearty main course, offering a delightful mix of smoky, sour, and savory flavors that celebrate Russian culinary tradition.
