- 1 large onion, chopped

- 1-inch piece fresh ginger, grated
- 2–3 Scotch bonnet peppers (adjust to taste), chopped
- 2 tablespoons ground crayfish (optional)
- 2 tablespoons pepper soup spice mix (or a blend of calabash nutmeg, alligator pepper, and cloves)
- 6 cups water or chicken stock
- 2 seasoning cubes (or to taste)
- Salt to taste
- Fresh basil or scent leaves for garnish

In a large pot, combine water or chicken stock with chopped onion, garlic, ginger, and Scotch bonnet peppers. Bring to a boil over medium-high heat.

Add the chicken (or your chosen protein) to the boiling broth. Reduce heat to medium, cover, and simmer for 20–30 minutes, or until the meat is cooked through and tender.
