Pierogi (Polish Dumplings)

Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup butter, softened
For the Filling (Potato & Cheese):
- 2 cups mashed potatoes
- 1 cup farmer’s cheese or ricotta
- 1 small onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Optional Topping:
- 2 tablespoons butter, melted
- 1 small onion, finely chopped and sautéed until golden

Prepare the Dough
In a large bowl, combine flour and salt. Mix in egg, sour cream, and softened butter. Knead until the dough is smooth and elastic. Cover with a towel and let rest for 30 minutes.

Make the Filling
In a skillet, melt butter and sauté the chopped onion until soft and golden. In a bowl, combine mashed potatoes, cheese, sautéed onion, salt, and pepper. Mix well.

Assemble the Pierogi
Roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut into circles using a cookie cutter or glass (about 3 inches in diameter). Place a spoonful of filling in the center of each circle. Fold the dough over and pinch the edges firmly to seal.

Cook the Pierogi
Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float to the surface, about 3–5 minutes. Remove with a slotted spoon.

Optional Pan-Fry
For added flavor, melt butter in a skillet and lightly fry the boiled pierogi until golden brown on both sides.

Serve hot, topped with sautéed onions or a dollop of sour cream.
