Miso Soup (Japanese Soybean Paste Soup)

Ingredients

  • 4 cups dashi (Japanese soup stock)
  • 3 tablespoons miso paste (white, yellow, or red)
  • ½ block soft tofu, cut into small cubes
  • ¼ cup wakame (dried seaweed), soaked in water until rehydrated
  • 2 green onions, thinly sliced

Instructions

  1. Prepare the Broth

    In a medium saucepan, bring the dashi to a gentle simmer over medium heat.

  2. Add the Miso Paste

    Place the miso paste in a small bowl. Add a ladleful of hot dashi and whisk until smooth, then return the mixture to the saucepan. Stir gently to combine. Do not boil the soup after adding miso, as this reduces flavor and nutrients.

  3. Add Tofu and Wakame

    Stir in the cubed tofu and rehydrated wakame. Let them warm through in the hot broth for 1–2 minutes.

  4. Finish with Green Onions

    Add sliced green onions just before serving for freshness and aroma.
