Ingredients
- 4 pounds fresh grapes (preferably dark, sweet varieties)
- 1/2 cup water
- 1 tablespoon lemon juice (optional, helps preserve color and flavor)

Prepare the Grapes
Wash the grapes thoroughly and remove the stems. Place the grapes in a large pot and add water.

Cook the Grapes
Over medium heat, bring the grapes and water to a boil. Reduce the heat and simmer gently for about 30-40 minutes, until the grapes are soft and the juice is released.

Strain the Juice
Pass the cooked grapes through a fine mesh sieve or cheesecloth to separate the juice from the solids. Press gently to extract as much juice as possible.

Concentrate the Juice
Return the grape juice to a clean pot. Add lemon juice if desired. Simmer over low heat, stirring occasionally, until the juice thickens into a rich, dark syrup. This process may take 2–3 hours depending on the water content of the grapes.

Cool and Store
Allow the Pekmez to cool. Transfer it to sterilized jars or bottles. Store in the refrigerator for several months or in a cool, dark pantry if sealed properly.
Serving
Drizzle Pekmez over pancakes, yogurt, or bread. Use it as a natural sweetener in desserts or sauces. Its deep, fruity flavor adds warmth and character to both traditional and modern dishes.
