Ajvar (Balkan Red Pepper Spread)

Ingredients

  • 4 large red bell peppers
  • 2 medium eggplants
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Roast the Vegetables

    Preheat the oven to 450°F (230°C). Place the red peppers and eggplants on a baking sheet and roast until the skins are charred and blistered, turning occasionally, about 25–30 minutes.

  2. Peel and Seed

    Remove the roasted vegetables from the oven and let them cool slightly. Peel off the skins, remove the seeds from the peppers, and discard any stems.

  3. Blend the Ingredients

    Place the peeled peppers, eggplants, and minced garlic into a food processor or blender. Pulse until smooth.

  4. Cook the Ajvar

    Transfer the blended mixture to a large skillet over medium heat. Stir in olive oil, vinegar, sugar, salt, and black pepper. Simmer for 15–20 minutes, stirring occasionally, until the mixture thickens and the flavors meld together.

  5. Cool and Store

    Allow the Ajvar to cool to room temperature, then transfer it to sterilized jars. Store in the refrigerator for up to two weeks.

  6. Serve

    Serve Ajvar as a spread on fresh bread, a topping for grilled meats, or as a flavorful dip for vegetables. Its smoky, slightly sweet flavor makes it a perfect addition to any meal.
