Kajmak (Creamy Balkan Cheese Spread)

Experience the rich and creamy flavors of the Balkans with Kajmak, a traditional dairy delicacy that is both luxurious and comforting. Ingredients

  • 1 liter whole milk
  • 250 ml heavy cream
  • 1/2 teaspoon salt (or to taste)

Instructions

  1. Heat the Milk

    Pour the milk into a large, heavy-bottomed saucepan and heat over medium heat until it reaches a gentle simmer. Stir occasionally to prevent the milk from sticking or forming a skin.

  2. Add the Cream

    Slowly add the heavy cream to the simmering milk. Reduce the heat to low and continue to cook gently, allowing the mixture to thicken slightly.

  3. Form the Kajmak Layer

    Once the mixture thickens, remove it from heat and allow it to cool slightly. Pour the mixture into shallow containers and cover loosely. Let it sit at room temperature for several hours or overnight. During this time, a creamy layer (the kajmak) will form on top.

  4. Skim and Season

    Carefully skim the creamy layer from the surface and place it in a clean bowl. Stir in salt to taste, adjusting according to your preference.

  5. Chill and Serve

    Refrigerate the kajmak for a few hours to firm up before serving. Spread it on fresh bread, serve alongside grilled meats, or use as a topping for savory dishes.
