Pastizzi (Maltese Savory Pastries)

Ingredients

- 3 cups all-purpose flour
- 1 teaspoon salt

- 1 egg (optional, for richness)
- Salt and pepper to taste
For the Pea Filling (alternative):
- 1 1/2 cups cooked peas
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon curry powder
- Salt and pepper to taste

Make the Dough
In a large bowl, mix the flour and salt. Gradually add water, kneading until you form a smooth, elastic dough.
Cover the dough with a damp cloth and let it rest for 30 minutes.

Prepare the Fillings
Ricotta Filling: Mix ricotta with egg (if using), salt, and pepper until smooth.
Pea Filling: Sauté the onion in olive oil until soft. Add peas, curry powder, salt, and pepper. Mash lightly with a fork, leaving some texture.

Layer the Dough
Roll out the dough thinly into a large rectangle. Spread a thin layer of softened lard or butter over the surface.
Roll up the dough like a jelly roll, then coil it into a spiral. Cover and let rest for another 30 minutes.
Cut the dough spiral into slices, about 2 inches thick. Roll each slice into an oval shape.

Fill and Shape
Place a spoonful of filling in the center of each oval.
Fold the pastry over the filling, pinching and twisting the ends to seal in a traditional pastizzi shape (like a diamond or eye shape).

Preheat oven to 200°C (400°F).
Place pastizzi on a lined baking sheet.
Bake for 25–30 minutes, or until golden brown and flaky.
Serving
Serve Pastizzi warm, straight from the oven, for the best flaky texture. They pair beautifully with hot tea, coffee, or a cold Maltese beer.
