Barszcz (Traditional Beet Soup)

Ingredients

  • 2 medium beets, peeled and grated
  • 1 medium carrot, grated
  • 1 medium potato, diced
  • 1/2 small cabbage, shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • 1 tablespoon vegetable oil
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 tablespoon vinegar or lemon juice
  • Salt and pepper to taste
  • Fresh dill, chopped, for garnish
  • Sour cream, for serving
  • Optional: 1/2 pound beef or pork, diced

Instructions

  1. Prepare the Vegetables

    Heat vegetable oil in a large pot over medium heat. Add onion and garlic, sauté until translucent. Add grated beets and carrot, cook for 5–7 minutes, stirring occasionally.

  2. Cook the Soup

    Add diced potato, shredded cabbage, and tomato paste to the pot. Stir to combine. Pour in the broth, add bay leaf, sugar, and optional meat if using. Bring to a boil, then reduce heat and simmer for 30–40 minutes, until vegetables are tender.

  3. Season the Barszcz

    Add vinegar or lemon juice, and season with salt and pepper to taste. Remove the bay leaf. Adjust seasoning if necessary.

  4. Serve

    Ladle hot Barszcz into bowls, garnish with fresh dill, and add a dollop of sour cream on top. Serve with dark rye bread or boiled potatoes on the side for a complete meal.
