  • 2 medium potatoes, diced

  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 sprig rosemary
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Rabbit

    Pat rabbit pieces dry and season generously with salt and pepper. Lightly dredge them in flour to help with browning.

  2. Brown the Meat

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Brown the rabbit pieces on all sides until golden, then remove and set aside.

  3. Build the Flavor

    In the same pot, sauté onions, garlic, carrots, and celery until softened, about 5 minutes. Stir in mushrooms and cook for 2–3 minutes more.

  4. Deglaze and Simmer

    Sprinkle flour over the vegetables and stir well. Pour in the white wine, scraping up any browned bits from the bottom of the pot. Return the rabbit to the pot, then add broth, potatoes, bay leaves, thyme, and rosemary. Bring to a boil, then reduce to a gentle simmer.
