Pastilla (Moroccan Chicken Pie)

Perfect for festive gatherings or an impressive family dinner, Pastilla is a culinary delight that balances sweet and savory in every bite.

Ingredients

  • 1 whole chicken (about 3–4 lbs) or 4 chicken breasts
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon saffron threads (optional)
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped fresh parsley
  • 3 tablespoons butter
  • 1 cup blanched almonds, toasted
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon (for almond mixture)
  • 8–10 sheets of phyllo dough or warqa
  • Powdered sugar and cinnamon for garnish

Instructions

  1. Prepare the Chicken

    In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until softened. Add chicken, spices (cinnamon, ginger, turmeric, saffron), salt, and pepper. Cover with water and simmer for 45–60 minutes, or until the chicken is fully cooked and tender. Remove the chicken and let cool slightly, then shred the meat, discarding bones and skin.

  2. Make the Almond Filling

    In a small bowl, combine toasted almonds, sugar, and 1 teaspoon cinnamon. Set aside.

  3. Assemble the Pastilla

    Preheat oven to 375°F (190°C). Brush a round baking dish with melted butter. Lay one sheet of phyllo dough in the dish, letting the edges hang over the sides. Layer additional sheets, brushing each with butter. Place a layer of shredded chicken in the center, sprinkle with cilantro and parsley, and then add a layer of almond mixture. Fold the overhanging dough over the filling, brushing with butter as you go, to enclose the pie.

  4. Bake

    Bake the Pastilla for 25–30 minutes, or until the pastry is golden and crispy. Remove from oven and let rest for 10 minutes.

  5. Serve

    Dust the top with powdered sugar and cinnamon before serving for a beautiful sweet-savory contrast.
