Harira (Moroccan Lentil and Chickpea Soup)

Ingredients

  • 1 cup dried chickpeas (soaked overnight)
  • 1/2 cup lentils
  • 1 large onion, finely chopped
  • 2 celery stalks, chopped
  • 2 large tomatoes, peeled and chopped
  • 1/4 cup tomato paste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 3 tablespoons olive oil
  • 6 cups vegetable or chicken broth
  • 1/2 cup fine vermicelli or rice (optional)
  • 2 tablespoons flour mixed with 1/4 cup water (for thickening, optional)
  • Juice of 1 lemon (optional)

Instructions

  1. Prepare the Base

    Heat olive oil in a large pot over medium heat. Add chopped onions and celery, and sauté until soft and fragrant. Stir in the tomatoes and tomato paste, cooking for 5–7 minutes until they start breaking down.

  2. Add Legumes and Spices

    Add soaked chickpeas, lentils, turmeric, cinnamon, ginger, black pepper, and salt. Pour in the broth, bring to a boil, then reduce heat and simmer for 45–60 minutes, or until the chickpeas and lentils are tender.

  3. Add Herbs and Optional Ingredients

    Stir in chopped parsley and cilantro. If using vermicelli or rice, add it now and cook until tender. For a thicker consistency, gradually whisk in the flour-water mixture, stirring constantly.

  4. Finish with Lemon

    Remove from heat and add lemon juice to taste for a bright, fresh finish. Adjust seasoning if necessary.

  5. Serve

    Ladle the Harira into bowls and serve hot. It pairs wonderfully with warm crusty bread or traditional Moroccan dates for a complete experience.
