Pastéis de Nata (Portuguese Custard Tarts)

Ingredients

  • 1 sheet puff pastry, thawed
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 6 large egg yolks
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Ground cinnamon (optional, for serving)

Instructions

  1. Prepare the Custard

    In a medium saucepan, combine milk, cream, sugar, and lemon zest. Heat over medium heat until warm but not boiling. In a small bowl, whisk together flour and egg yolks until smooth. Slowly pour the warm milk mixture into the egg yolks, whisking constantly to prevent curdling. Return the mixture to the saucepan. Cook over low heat, stirring constantly, until the custard thickens to a smooth, creamy consistency. Remove from heat and stir in vanilla extract. Let cool slightly.

  2. Prepare the Pastry

    Preheat the oven to 475°F (245°C) and lightly grease a muffin tin. Roll out the puff pastry sheet and cut into circles slightly larger than the muffin tin cavities. Press the pastry into each cavity, ensuring it comes up the sides.

  3. Assemble and Bake

    Fill each pastry shell with custard, leaving a small gap at the top to allow for expansion. Bake for 12–15 minutes, or until the custard is bubbling and the tops are caramelized and slightly blistered.

  4. Serve

    Let the tarts cool slightly before removing from the tin. Sprinkle with a pinch of cinnamon if desired and serve warm.
