Otai (Traditional Uzbek Fruit and Yogurt Drink)

Experience the refreshing and tangy flavors of Central Asian cuisine with Otai, a traditional Uzbek drink made from yogurt and fresh fruits. Perfect for hot summer days, this chilled beverage is both invigorating and healthy, offering a delightful balance of sweet, sour, and creamy notes.

Ingredients

  • 2 cups plain yogurt
  • 2 cups cold water
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon salt
  • 1 medium cucumber, peeled and grated
  • 1 small apple, peeled and finely chopped
  • 1 small pear, peeled and finely chopped
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the Base

In a large bowl, whisk together the yogurt, cold water, sugar, and salt until smooth and well combined. Adjust sweetness or saltiness to taste.

  2. Add Fruits and Cucumber

Gently stir in the grated cucumber, chopped apple, and pear. Mix until evenly distributed throughout the yogurt mixture.

  3. Chill the Drink

Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the drink to become refreshingly cold.

  4. Serve

Pour the Otai into glasses over ice cubes if desired. Garnish with fresh mint leaves for an aromatic touch.

Serving

Serve Otai as a cooling accompaniment to meals or as a standalone refreshing beverage on warm days. Its light, fruity flavor makes it a perfect way to hydrate and enjoy the tastes of Uzbekistan.
