Heat vegetable oil in a nonstick skillet or griddle over medium heat. Spoon a portion of the batter onto the skillet and shape it into a thick round pancake, about 6–8 inches wide. Lay a few slices of pork belly across the top. Cook for about 5 minutes, until the bottom is golden brown.
